Soil is nurturing a family environment for every team member. In their first restaurant, co-owners Tasos Mantis and Alex Mouridis aim to build a strong team with much talent by standing next to them, sharing the same passion for outstanding fine dining and the desire to offer an extraordinary experience in the Athenian gastronomic scene. Besides its own people, Soil appreciates all of its valuable partners and close family members who assist in making this project unique, from small producers to wine makers, from suppliers and cleaners to artistic creators and all external partners.

Tasos Mantis has been acknowledged for his talent and creativity, having worked in the kitchens of Michelin-awarded restaurants, such as Hof Van Cleve in Belgium (3 Michelin stars), Geranium in Copenhagen (3 Michelin stars), Frantzén in Stockholm (3 Michelin stars) and Fat Duck in the UK (3 Michelin stars). Following his exquisite international experience, he settled in Greece leading the team in Hytra, Athens, awarded with 1 Michelin star, constantly developing his creative Greek cooking and exceptional presentation. Over the last years, he has been nurturing his love of nature through his own garden, leading the way in elevating the standards of Greek gastronomy, leveraging sustainability, botanology and farm-to-table through his cooking. At Soil, he aims to offer plenty of new gastronomic surprises.

Co-owner Alex Mouridis has over 20 years of experience in Senior Food & Beverage Management positions across three countries (Greece, UK and Saudi Arabia). Since moving to the UK at the age of 19, he has worked for Raymond Blanc, Marco Pierre White Restaurants and the Royal Automobile Club as Restaurant General Manager, while in 2019, he took on the role of Food & Beverage Manager for King Salman Bin Abdulaziz Al Saud in Saudi Arabia. In between his time in the UK and Saudi Arabia, he worked as General Manager at Michelin Star Restaurant Hytra in Athens and Food & Beverage Manager at the AMANZOE Resort in Porto Cheli. At Soil, he aims to offer the most professional and charming service in Athens.
